Noodles with the traditional taste and cooking methods are still constantly prevalent across generations. Each noodle shop has its secret recipe to make its signature dishes to maintain outstanding recognition in the industry. The young generation prefers to engage in higher social status careers, rather than spending years learning the mastery in hot kitchens, no more new devotees. The humble roadside noodle stall in this photo which had been in business for 70 years, was driven to close down under rapid city development at the end of October 2023.
